Basis of Design Survey
Our Design Team meets with owners’ representative to review design requirements:
- Set Objectives and Goals for the Design
- Set the Budget
- Representative of the Owner Defines the Menu
- Review Labor Requirements
- Provide a Narrative of the Process
- This Narrative used as the Basis of the Design
Schematic Design
- Critical adjacencies are established
- All food service areas are defined and drawn for owner’s review
- All food service equipment is defined, detailed and itemized
- ADA accessibility is indicated in the kitchen and related spaces
- A Schematic Design budget is produced
- Start Consultant coordination
- Provide a 3-D rendering of the front of the house design
Design Development
- Plumbing location connection points and loads are located detailed
- Electrical location connection points and loads are located and detailed
- Refrigeration engineering plans are developed
- Exhaust hood engineering is developed
- CFM, FPM and Static Air Requirements are provided
- Outlet sizes (exhaust collars) located and sized
- Inlet sizes (make-up air collars) located and sized
- Building works and conditions plan
- Floor Depressions and curbs
- Wall backing for Food Service Equipment
- Special Wall Finishes
- Exhaust Hood Locations
- Consultant coordination
Construction Documents
- Elevations, sections, details
- A 3-D rendering of the complete space is produced
- Seismic restraints for Food Service Equipment (SMACNA only) are indicated and detailed
- Finish schedule
- Final Q.C. (Quality Control) of documents
- Final budget
- Consultant coordination
Health Department Submittal
- Coordinated by DMH
- Checklists provided to Districts and Architects
- Documents submitted by DMH
- Address all comments and resubmit as needed for approval
Construction Administration
- Review of Bids
- Review of Submittal Drawings
- Review and Respond to RFIs (Request for Information)
- Review and Respond to CO (Change Order) requests
- Site Review and Field Reports
- Administration
- Final Walk Through and Contractor’s Punch List
